Bacon and Shaved Brussels Sprouts

Ingredients:
- Dressing:
- Juice of 2 lemons (about 5-6 tablespoons)
- Juice of 1 lime (about 2 tablespoons)
- 1/2 cup olive oil or avocado oil
- 1 tablespoon minced green onions
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Salad:
- 5-6 slices bacon, cooked and crumbled
- 1 1/2 pounds Brussels sprouts, thinly sliced (about 6 cups)
- 1 cup shredded or grated Parmesan cheese
- 1/2 cup chopped almonds (you can toast them, if you prefer)
Directions:
- In a jar, combine ingredients for the salad dressing and shake until well combined.
- In a large salad bowl, combine the rest of the ingredients and toss.
- Finish the dish by drizzling salad dressing over the Brussels sprouts and bacon. Serve immediately.
